Well, this was a great great attempt of me to make ‘the most’ sustainable vegan cheese. I had several trials using cashews (like everyone else in the vegan cheese world) till i just simply realised A TRUTH. Cashews are not sustainable at all plus stupid expensive. So i started to look for other more friendly alternatives. Like people making ‘tofus’ out of chickpeas and lentils (of course of course has nothing to do with tofu and we should not call it tofu cause has never even been on the same kitchen shelf as soy beans). LOL.
